Windows Process Memory Usage Caculation

Dear Team:

I want to know how system task manager calculates a Process Memory Usage,When  i run a  VirtualServer using  virtualbox software ,The task manager bar displays mem usage above 70%,i sum all process memory from task manager,but the sum data below 70%,if i shutdown the VirtualServer,the memory usage back to normal.
