Web server: Log all requests with IP

So here's the scenario. Once a week we publish a report (at the exact same time) on our website that gets a lot of attention. In the matter of seconds "Current connections" goes from 0 to 4000-5000, and the server goes down/extreme high response time. I don't think this is actual human traffic but bots set up to get and parse the report.

So this is what I would like: Start a logging tool - run it for an hour - read all requests to the web server, so I can see all IP's and how many requests from each IP within that hour. Can this be achieved? Is it a monitor to see this in real time also? I have tried to use performance monitor but I can't seem to find the counters giving me the info I want.
